Use the Oil you prepared from shells

2 free-range egg yolks

Small squeeze of lime juice

1/2 tsp English mustard

200ml/7fl oz Shell oil

 

Method

For the Shell mayonnaise, whisk the egg yolks, lime juice and mustard together in a bowl.

Gradually whisk in 200ml/7fl oz of the Shell oil until the mayonnaise has thickened.
